Royal icing is nothing but a white or color icing, which hardens on drying, usually made with icing sugar, egg whites and also lemon juice.
The eggless version of the royal icing can be made with multiple variations. It can be made by combining icing sugar with any of the below ingredients.
- liquid glucose
- corn syrup
- honey
- milk
- corn flour
- Aquafaba (most famous and preferred ingredient for eggless royal icing)
I have made this eggless Royal icing with the help of Icing sugar, corn flour/starch, milk, lemon juice and flavor essence. It is so easy and quick to make and this can be used to decorate sugar cookies, gingerbread houses, cupcakes and many more. Let's get to the recipe.
Things needed:
* Icing sugar / Powdered sugar - 3/4th cup
* Corn flour/starch - 1 Tbsp
* Lemon juice - 1 Tsp
* Flavoring essence of your choice - I have used Vanilla and Almond
* Milk - 1-2 Tbsp
Step-By-Step pictorial representation:
Step 1: Place a sieve on the bowl. Add powdered sugar and corn flour and sift. This step is needed to break any lumps in the icing sugar.
Step 2: Once sifted, add flavor essence of your choice. I used almond flavor for pink color and used Vanilla flavor for other colors. Refer notes*
Step 3: Add lemon juice and mix
Step 4: Now add milk slowly, 1/2 tbsp at a time. Add milk, mix gently and keep an eye on the consistency. If needed, add more milk. Refer notes*
Step 5: The consistency of this royal icing should be semi liquid which, if taken on a spoon and dropped into the bowl, should stay for 10 counts before mixing with the rest of the icing.
Once this consistency is attained, split the royal icing into separate small bowls according to the number of colors needed.
Add a toothpick or a spoon to each bowl and add gel colors of your choice in small quantities.
Mix them evenly. Once all colors are mixed well, transfer them onto separate piping bags. Eggless Royal Icing is now ready and can be used to frost sugar cookies, Gingerbread houses, cupcakes and much more.

Adding Royal Icing to the cookies was a fun activity. My kid got so involved, she frosted most of these cookies. It was an exciting fun time for the both of us. If you ever try this recipe, you can also involve your li'l one, at the end of which both would have had the best time.
Notes:
1. Adding of flavoring essence is a choice. If you prefer plain royal icing skip this part.
2. Another important thing to remember is, if you like your Royal Icing to be of different flavors, then add the flavors after transferring the white royal icing to small bowls, before adding colors.
3. Adding lemon juice helps in giving a good bright white color.
4. Be very cautious while adding milk to the semi dry mix. Add very little quantity of milk at a time and mix. But if you feel the consistency is runny, add further more powdered sugar and mix. A few extra spoons of powdered sugar won't impact the texture or taste.

Eggless
Royal Icing

INGREDIENTS
¾ Cup – Powdered Sugar
1 Tablespoon – Corn flour/starch

3. Now start adding milk slowly, ½ tbsp at a time

the royal icing into smaller bowls and add small quantities of gel colors. Mix
them evenly.
5. Now transfer this royal icing onto separate
piping bags.
6. Royal Icing is now ready, and can be used to
frost Sugar cookies, Gingerbread House, Cupcakes and much more.
