White Chocochip walnut Cookies

This would be the best white chocolate chip cookies recipe you ever came through. Crispy on the edges with a gooey and soft center, this white chocolate chip cookie is everything you ever expected. The walnuts added in the cookie gives a crunch with every bite, thereby balancing the soft inside. 



If you are a lover of white chocolate then this will be your new favourite. Pair this cookie with some chilled milk and in no time you'll be obsessed with these. And since the dough does not need chilling time, you will be ready with the cookies in no time. All you need is a set of ingredients put together in a bowl and whipped up into a dough. 

THINGS NEEDED FOR THIS RECIPE: 


Ingredients :  

  • Butter - 1/2 Cup - 113 Grams (Room Temperature) 
  • Brown sugar - 1/2 Cup - 100 grams 
  • All purpose flour - 1 Cup - 130 Grams 
  • Baking powder - 1/2 Teaspoon 
  • Vanilla essence 1/2 Teaspoon
  • Milk - 4 Tablespoon (Refer Notes)  
  • Salt - 1/8th Teaspoon 
  • Walnuts - 2 Tablespoon 
  • White chocochips - 1/3rd Cup ( or As much as needed) 

Butter - I use unsalted butter in my recipes and add a pinch of salt at a later stage. Make sure to use room temperature butter as it helps in incorporating air and that results in spreading of cookies. Room temperature butter is also needed to cream butter and sugar. Do not use cold butter as it will lead to a lumpy dough. 

Brown sugar - I like using brown sugar in my chocolate based cookies as it gives a good caramelized flavor. You can also replace this brown sugar quantity with half of white and half of brown sugar.

Flour - I have used regular all purpose flour here. You can also use organic unbleached Maida.  

Vanilla essence - I have used Harvey's brand vanilla essence. You can also use Vanilla extract. 

White chocolate chip - You can use any brand white chocochips of your choice. You can also use white chocolate bar and cut it into smaller chunks and use it. 

Milk - I have used 3 tablespoons of milk for this recipe. Make sure to add milk into the dough one tablespoon at a time, until reaching upon the desired consistency. 

Walnuts - I have used roasted walnuts here. You can use walnuts, or macadamia nuts or can skip this part entirely.

Salt - I use unsalted butter and then at a later stage in the recipe I add salt. It helps in giving a good balance for the sugar added. 

STEP BY STEP REPRESENTATION: 

Step 1 : Whisk together flour, baking powder and salt and set it aside. 


Step 2 : Add together brown sugar and butter. Here I have crushed brown sugar. It can also be added as it is. 


Step 3 : With a hand whisk or an electric beater combine butter and sugar. Beat butter and sugar well until you get a light, fluffy texture. Refer the below image. 



Step 4 : Now add in 3 tablespoons of milk and 1/2 teaspoon of Vanilla. Combine these. 


Step 5 : Now add in the dry ingredients that was set aside earlier. 


Step 6 : Now add chocochips and walnuts as much as needed. I have mentioned 1/3 cup of chocochips but you can add even more because it can never be too much right?  


Step 7 : Combine all these to form a dough. Remember not to knead or overmix. Just combine them to form a dough. 


Step 8 : Preheat your oven to 175°c for 10 minutes and start scooping the dough in a baking tray lined with parchment paper. Now remember to place the dough at 3 inches gap as the cookies will spread. If they are closely placed you may end up with cookies sticking to each other. 

Step 9 : Place the baking tray in the oven and bake them for 10 - 12 mins. Remember, every oven is different, so you need to check for the cookies to turn golden brown in the edges. That's when the cookies are done. I baked the cookies for 11 mins. 

Step 10 : Once the cookies are done, take them out of the oven and let them sit in the baking tray for 10 minutes. After 10 minutes transfer them onto a cooling rack and completely cool them after. 


Store them in an airtight container and this will be good for 5-7 days.

INGREDIENTS

Butter - 1/2 cup or 113 gms

Brown Sugar - 1/2 cup or 100 gms

All purpose flour - 1 Cup or 130 gms

Baking Powder - 1/2 tsp

Salt - 1/8 Tsp

Vanilla Essence/ Extract - 1/2 Tsp

Milk 4 Tbsp

White Chocochips - 1/3 cup

Walnuts - 2 Tbsp

 

Instructions:

1. In a bowl add All purpose flour, Baking Powder and Salt. Set aside.

2 In another bowl mix together crushed brown sugar and butter, Beat them well with a hand whisk or an electric beater until they turn creamy.

3. Now add in Vanilla essence and milk. Firstly add 3 tbsp of milk and depending on the consistency of the dough add further if needed.

4. Add the dry ingredients and combine together. DONOT overmix or knead the dough. 

5. Add chopped walnuts and chocochips and combine.

6. Preheat the oven to 175°c for 10 minutes and in the meantime start scooping the dough into a baking tray lined with parchment paper.

7. Bake for 10-12 mins or until the edges turn golden brown.

8. Take them out of oven and keep then in the baking tray for 10 minutes. After 10 minutes, transfer them onto a cooling rack and cool completely.



Notes:

1. Using unsalted butter is preferred. If using salted butter skip adding salt.

2. Creaming of butter and sugar is important as it results in giving a good spread to the cookies.

3. If the cookie dough turns out too soft, unable to scoop out, chill the dough for 10-15 minutes and then scoop.

4. I used 1 Tablespoon size to scoop out the cookies. If you want a bigger size cookie use a bigger scoop.

5. Place the dough scoops at 3 inches gap at least as they will spread while baking.

6. Spreading of cookies have never been a problem to me, so I just scoop out the dough and place them. 

7. Once you take these out of oven, immediately press some chocochips into the top of the cookies, while they are still hot. This will give a good finish to the cookies.
